Patate arrosto, roast potatoes, are the side every Italian table argues over. Who gets the crispy ones. Why there are never enough. So we make a full tray.
Baby chat potatoes, halved and roasted skin-on in olive oil with garlic, rosemary and sea salt until the cut side is golden and the skins blister. Finished with parsley and a little more salt.
Serves 6 to 8. The safe pair for anything: lasagne trays, roast chicken, beef skewers, or a boardroom lunch that needs something hot and filling on the table. Delivered hot and ready to serve.
