Carrots are the side nobody plans for and everybody eats. Roasted whole, they turn sweet and a little smoky, and the purple, yellow and orange ones make the tray look like you tried harder than you did.
Whole rainbow Dutch carrots, tops trimmed, roasted in olive oil with a light maple glaze, sea salt, cracked pepper and a pinch of chilli flakes, finished with toasted almonds and fresh parsley.
Serves 6 to 8. Brings colour to a table of pasta trays and roast meats, so it earns its place at client lunches and catered dinners where the spread is on show. Delivered hot and ready to serve.
